Anatomy of a Brownie

Recently, I baked a tray of brownies. I put some on a plate for work, then left a few on a smaller plate to leave at home. My husband wandered into the kitchen while I was doing this.

Husband: "The ones you put on the plate for us to keep are all edge pieces!"

Me: "Right. Is that a problem?"

Husband: "The edge pieces aren't as good. They're not as chewy."

Me: "What are talking about??? The edge pieces are the best pieces!"

Husband: "I don't think you understand chocolate."

Me: "I don't think you understand chocolate."

I know I'm not alone on preferring the edge pieces. But I also once met a woman who told me that for years, when she made brownies, she actually threw away the edge pieces because she thought they were garbage. What a terrible, terrible waste!

  2. I've also seen brownie pans designed with grids or metal pieces in the middle so that ALL of the pieces are edge pieces.

  4. I'm with your husband on this one. My favorite kind of brownie is the one that's borderline not fully cooked, so it's kind of ooey-gooey!

  6. Totally with your husband here. The softer the brownie, the better. Honestly, I would be completely satisfied with straight hot, molten brownie mix I had to eat with a spoon.

  7. Yes, no brownie sides. Same way with cookies: most people want them soft and chewy not crusty.

  8. Ooh. No brownie edges. Just very rare pan of brownies, a fork, and leave the edges for the kids' nondiscriminating palates...

  10. Definitely no edges. Soft, chewy, gooey. That's the whole purpose of a brownie. I never understood why that "all edges" brownie pan was such a hit :\
